Cream of olives of the Taggiasca (softer) or Leccino (tastier) varieties. Made with aromatic herbs and extra virgin olive oil, it is used to flavor pasta - alone, or with tomato sauce and mozzarella - to accompany meats, to dress sandwiches, and to smear on bread.
